Cheesy Cauliflower and Ham Bake


1 large head cauliflower, cut into florets

2 cups diced ham

1 cup shredded cheddar cheese

1/2 cup diced green bell pepper

1/2 cup diced onion

1/2 cup sour cream

1/4 cup mayonnaise

2 cloves garlic, minced

1 teaspoon Dijon mustard

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika

1/4 teaspoon dried thyme leaves


Preheat your oven to 350°F (175°C).
In a large pot, steam the cauliflower florets until they are tender but not mushy, about 5-7 minutes. Drain them well and set aside.

In a large mixing bowl, combine the diced ham, shredded cheddar cheese, diced green bell pepper, and diced onion.

In a separate bowl, whisk together the sour cream, mayonnaise, minced garlic, Dijon mustard, salt, black pepper, paprika, and dried thyme leaves.
Add the steamed cauliflower to the bowl with the ham and vegetable mixture.

Pour the creamy dressing over the cauliflower and ham mixture and toss until everything is well coated.

Transfer the mixture to a greased 9×13-inch baking dish and spread it out evenly.

Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly, and the top is golden brown.

Let it cool for a few minutes before serving.
