Low-Carb Ranger Treats


1 cup almond flour

1/4 cup coconut flour

1/4 cup unsweetened shredded coconut

1/4 cup chopped pecans

1/4 cup sugar-free chocolate chips

1/4 cup erythritol or your preferred sugar substitute

1/4 cup melted coconut oil

1 egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt


Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, combine the almond flour, coconut flour, shredded coconut, chopped pecans, sugar-free chocolate chips, erythritol, baking soda, and salt.

In a separate bowl, whisk together the melted coconut oil, egg, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until a dough forms.

Use a cookie scoop or your hands to shape the dough into 12 equal-sized cookies. Place them on the prepared baking sheet, spacing them out evenly.

Gently flatten each cookie with your fingers or the back of a fork.

Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown around the edges.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
