1 1/2 cups almond flour

1/2 cup unsweetened cocoa powder

1/2 cup powdered erythritol

1/4 tsp salt

1/2 cup unsalted butter, melted

1 tsp peppermint extract

1 large egg

1/2 cup sugar-free dark chocolate chips

1/4 cup heavy cream


In a mixing bowl, combine almond flour, cocoa powder, powdered erythritol, and salt.

Add the melted butter, peppermint extract, and the egg to the dry ingredients. Mix until a thick dough forms.

Press the dough evenly into a lined 8×8-inch (20×20 cm) square baking pan.

In a microwave-safe bowl, melt the sugar-free dark chocolate chips and heavy cream together in 20-second intervals, stirring in between until smooth.

Pour the melted chocolate mixture over the dough in the pan, spreading it out evenly.

Refrigerate for at least 2 hours, or until the chocolate topping is set.
Once set, remove from the fridge and cut into squares.
